Rustic Dough Works | Our Story

From the truck to two neighborhoods
Rustic Dough Works started with a simple conviction: respect the dough, respect the customer. From humble pizza truck roots to two Florida locations that feel like home, the story is one pie at a time.
The sourdough foundation
Slow-fermented sourdough, two styles: 12-inch Neapolitan for the purists, 16-inch NY-style for crispy-outside, chewy-inside perfection. Every pie gets the time it deserves.
More than a pizzeria
Cheesecake in lemon curd and cookie butter, cinnamon rolls gone by mid-morning, bagels that sell out early, and salted caramel bread pudding. Plus a full Italian-American dinner menu and breakfast until 11 AM at Palm Coast.
Two neighborhoods
Palm Coast's City Market Place, Daytona's International Speedway Boulevard — each location carries the same unflinching commitment to craft. Same sourdough, same swagger, different vibes.

The family table
Regulars have followed from the truck days. Staff like Gwyn, Lexie, and Melia get called out by name in reviews. That's not a service standard — that's hospitality. Every shift, someone's been coming here long enough to know what they want before they order.
